Mixed Fresh Fruit with Lime and Ginger

Ingredients

  • 1/4 cup sugar
  • 2 tablespoons water
  • 1/2 teaspoon grated lime peel
  • 2 tablespoons lime juice
  • 2 cups bite-size pieces honeydew melon
  • 2 tablespoons finely chopped crystallized ginger
  • 2 cups halved fresh strawberries
  • Additional grated lime peel, if desired

    In 1-quart saucepan, heat sugar and water to boiling. Remove from heat; stir in 1/2 teaspoon lime peel and the lime juice. Cool 10 minutes.

    In medium bowl, place melon and ginger. Pour sugar mixture over melon mixture. Cover; refrigerate about 1 hour to blend flavors.
  • 3
    Just before serving, stir strawberries into melon mixture. Serve garnished with additional lime peel.

  • This versatile dish could be served for breakfast or as a side at a picnic.
