These treats are a delicious and filling alternative to a granola bar.
cup butter, softened
cup packed brown sugar
tubes (2.25 oz each) Yoplait® Go-Gurt® yogurt or Yoplait® Go-Gurt® Protein yogurt, any flavor (from 1 lb 2 oz box)
cups quick cooking or old-fashioned oats
cup dried strawberries
cup chopped walnuts, if desired
Heat oven to 350°F. Place paper baking cup in each of 12 regular-size muffin cups.
In large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy. Add egg and banana, beating until well mixed. Beat in yogurt. Stir in oats, dried strawberries and walnuts. Divide mixture evenly among muffin cups.
Bake about 25 minutes or until tops are golden brown. Cool on rack 15 minutes.
These oat cakes freeze very well! Simply place in a resealable freezer plastic bag when completely cool, and freeze. Defrost completely and enjoy.
