Mixed-Berry Granola Crunch

Enjoy this crunchy snack sprinkled with berries - ready in just 30 minutes.

Ingredients

bag (12 oz) frozen unsweetened blueberries (about 2 1/2 cups)
1
bag (12 oz) frozen unsweetened red raspberries (about 2 1/2 cups)
1
tablespoon lemon juice
1/2
cup sugar
2
tablespoons cornstarch
2
cups Cascadian Farms® organic oats & honey granola cereal
1/2
teaspoon ground cinnamon
2
tablespoons butter or margarine, melted, cooled
Vanilla ice cream, if desired

Directions

  • 1 In ungreased 8-inch square (2-quart) glass baking dish, place blueberries, raspberries and lemon juice. Microwave uncovered on High 4 to 6 minutes, stirring once, until thawed.
  • 2 In small bowl, mix sugar and cornstarch. Pour sugar mixture over berries; stir to coat berries. Microwave berries uncovered on High 10 to 12 minutes or until fruit is bubbling all over and mixture is thickened.
  • 3 In medium bowl, mix cereal and cinnamon. Stir in butter until well mixed. Sprinkle over berries. Serve warm or at room temperature with ice cream.

Expert Tips

Frozen berries are available year-round and are often more economical than fresh berries. However, when fresh berries are in good supply, substitute 6 cups of fresh berries for the frozen. Skip the microwave thawing step.

Substitute 1 cup of blackberries for 1 cup of the blueberries or raspberries, if you prefer.
