Ingredients

2 1/2: cups Gold Medal all purpose flour

1/2: teaspoon salt

1: cup shortening

1/3: cup ice cold water

1 1/2: cups sugar

1: cup plus 2 tablespoons butter

2: teaspoons vanilla extract

4 1/2: ounces unsweetened chocolate, melted

1: cup plus 2 tablespoons fat-free cholesterol free egg product

8: ounces frozen whipped topping, thawed

1: cup mint chocolate chips

Directions

1 Make pastry using flour, salt shortening and cold water. Divide dough in half. Roll out dough and fit each half into a 10-inch pie pan. You will only need one half so you can freeze the second tightly covered for another use. Use fork to prepare pastry before baking. Bake at 450 degrees for about 8 minutes or until light golden brown. Cool completely.
2 Beat butter and sugar on high until light and fluffy. Add vanilla and melted chocolate. Beat until fluffy. Gradually stir in egg product beating for about 5 minutes. Spoon about half of the filling into cooled pie crust. Sprinkle with about half of the chocolate chips. Spoon remainder of filling into crust. Spoon whipped topping over chocolate filling and spread. Sprinkle with remaining chocolate chips. Refrigerate for about 3 hours or until firm.
