Half cup of butter is ONE stick! I forgot to double check this and used two sticks. Chilled dough before baking to help salvage, but the cookies still flattened out. Flavor of dough was very good. Will try again.

I actually used Dark Chocolate Mint chips and still the recipe came out great. Kids love the yummy mint cookies. If your not a big mint fan I would suggest using the mint chips and no mint extract. Easy to make and delicious to eat! Oh, and the cookies are soft and chewy.

These cookies totally rock! I've made them several times over the past year. I always end up with more cookies than what the recipie says I'll have, but that's ok with me. Next time I'm going to try adding some dark chocolate chips instead of the chocolate chunk.
