These can be made ahead...After baking for 20 minutes, cool, wrap in foil and freeze. When ready to serve, place frozen appetizers on a baking sheet and bake at 275 degrees F for 10 or 12 minutes.

Small Fresh Shrip, Peeled & Deveined

Beaten Egg

Cup Half & Half
1
Tablespoon Brandy
1/2
Teaspoon Salt

Cup Gruyere Cheese
Dash of Pepper
  1. Preheat oven to 375 degrees F.
  2. Grease 2 mini muffin tins (total of 24 mini muffins) Place one shrimp in each shell. Combine egg, half and half, brandy, salt and pepper. Divide evenly among shells, using about 2 teaspoons for each. Top each with shredded gruyere cheese.
  3. Bake at 375 degrees for 20 minutes or until golden brown. Serve immediately.
