LOVED THEM!!! My husband, who never likes anything I make, said they were killer. I had to record him saying that. Made them for Thanksgiving and the whole family raved, just raved about them. I will make them again, but I think I'll used a different cookie for the crust then the gingersnap next time around. Perfect bite size for entertaining.

I agree with some of the other reviews - did not fill up enough and I will only make 8 the next time. And, I also had a problem, like the previous reviewer, with them deflating.

Can you make the filling and use for a whole pie? I made these in cupcake pan and after i took them out of the oven they deflated or something bc they have a dip in them. Did i over beat??

Recipe requested by all. My daughter made these for her 3 year old's class. Subsituted the Ginger Snaps for Nilla Wafers and a little less pumpkin mix.... everyone loved them.

I'm not the best baker, cooking is more my style (not as exact of a science). These mini cheesecakes were really easy to make and turned out wonderful! I made these for a birthday celebration and will be making them again. A great way to get that "cheesecake fix" without making a big one!

I made these this weekend for a baby shower and they were a big hit! I I used crushed animal crackers instead of the gingersnaps and served them with whipped cream with cinnamon. I'll definitely be making them again for Thanksgiving.

as my daughter, who doesnt like cheesecake said...these were amazing!!! I brought them to bunko and got rave reviews and multiple requests for the recipe...I did double the spices, which is what I do when I make pumpkin pie...ENJOY!!!!!! the whipped cream and caramel are a must!!!!

These were awesome! I needed a quick and easy recipe to make as small gift for a friend that was stopping by! I made them in a mini muffin pan and baked them for less time, and they were spectacular!!! Definately will be making these again to bring to holiday get togethers!
