I made these for a party in mini-muffin pans by crushing the wafers and using 1/2 tsp for the crust in each cup, filled the cup 2/3 full of cheesecake mix and baked at 350F for 14-15 mins. I topped each with just one cherry and a tiny bit of sauce(no almonds, though they would have been good too. I decided to leave them off.) The bite-sized pies flew off the tray and everyone loved them! Next time I'm mixing in some mini chocolate chips and topping with raspberry pie filling. Yum!

Great, quick and easy dessert that is the right portion size! Would recommend for any gathering. My daughter wants them for her birthday. Another variation is to add Chocolate Chips in the Cream Cheese part while mixing then add Cherry's on top! Then you have Chocolate Chip Cherry Cheesecakes ... out of this world!

I have been making these for years and everyone loves them. I find them easy to prepare. They can also be frozen for later use.
