This was an amazingly great little recipe! My Husband Loves Carrot cake, so I made it for him one after noon and it was a hit! The best part was that it was a small little cake just for him and I didn't have to make a regular sized cake.....truly delicious! I didn't have a Panini maker, and I just made it in the toaster oven instead and it turned out beautifully!

This sounds great. Haven't tried it yet and I don't have a panini grill. I will be trying it in a toaster oven... hopefully it will work well. So often we want a piece of cake but don't want the rest of the cake sitting around afterward tempting us!! Will try to remember to comment once I try it.
