Ingredients

box (4.5 oz) Betty Crocker® Seasoned Skillets® traditional recipe potatoes
Water and vegetable oil called for on potato box
1/2
cup crumbled cooked bacon
1/2
cup shredded Swiss cheese (2 oz)

eggs
1
cup whipping cream

Directions

  • 1 Heat oven to 350°F. Spray 12 regular-size muffin cups with cooking spray.
  • 2 Make potatoes as directed on box. Divide potato mixture evenly among muffin cups, pressing in bottom and up side of each cup to form crust. Sprinkle bacon and cheese evenly in cups. In medium bowl, beat eggs and cream. Pour filling evenly in cups, about 1/4 cup each.
  • 3 Bake 25 to 30 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

I made the potatoes and we had 1/2 recipe with our steak last night. Made a half recipe of these for Sunday brunch today using leftovers of the potatoes. I used RF cheddar cheese, egg beaters and 2% milk. Turned out great!!! I used the Garlic/Herb potatoes and that added an extra bit of flavor!

This sounds great and I plan to try it next weekend. I can't wait to read all the comments about using whipping cream LOL and the high cholesterol and calorie count! Sheesh. I like this recipe because I can adjust the ingredients to whatever I have on hand and what my family likes too. And I can make the quiches personal as well by adding the ingredients that one person does like and maybe someone else does not. Great recipe and great jumping off point too!
