cups mashed ripe bananas (3 to 4 medium)

cup buttermilk

teaspoon vanilla

cups Gold Medal® all-purpose flour

teaspoon baking soda

teaspoon salt
1
cup chopped nuts, if desired
  • 1 Heat oven to 350°F. Grease bottoms only of 10 (4 1/2x2 1/2x1 1/2-inch) mini loaf pans with shortening or cooking spray.
  • 2 In large bowl, mix sugar and butter with spoon. Stir in eggs until well blended. Add bananas, buttermilk and vanilla; beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Divide batter evenly among pans, filling each with about 1/2 cup batter.
  • 3 Bake 30 to 35 minutes or until toothpick inserted in centers comes out clean. Cool 5 minutes. Loosen sides of loaves from pans; remove from pans to cooling racks. Cool completely, about 2 hours. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

    jalyea and anyone else baking this for children - make sure you leave out the nuts since so many young people today have nut allergies which can be fatal.

    I haven't baked for years, but figured that this was an easy recipe to re-start my baking with. I had some bananas that were bout a day away from finding their way to the compost pile, which meant they were perfect for baking with. I didn't have any mini-loaf pans, so used three regular sized pans. They turned out SO good! I froze two of the loaves for the future, but I have a feeling that they won't last long! :-)

    My five year old son and I baked this recipe today, and it was easy enough for him to do most of the work. All the ingredients were things that were readily available and it turned out fantastic. A definite keeper and something we'll be bringing to his kindergarten class in the future!!
