i just made this and it is fantastic. First soup I've ever made and had no problems. I added about 2 cups of zucchini because I really like it and I think next time I will add more noodles because there weren't enough and they were hard to find. Veryyyy good though :)

This recipe is wonderful! We make the vegetarian version of it with garbanzo beans and veggie broth instead of sausage and beef broth. My husband, who's a diehard fan of Olive Garden's minestrone, even enjoys it. We just add a little garlic salt, ground black pepper, and less than 1/8 cup of red wine to it. Very excellent on a cool night with some homemade garlic bread.

This soup is delicious and easy to make; my family loved it! I had everything on-hand including left-over nothern beans which made it extra rich. This recipe is a keeper!
