This recipe is wonderful! We make the vegetarian version of it with garbanzo beans and veggie broth instead of sausage and beef broth. My husband, who's a diehard fan of Olive Garden's minestrone, even enjoys it. We just add a little garlic salt, ground black pepper, and less than 1/8 cup of red wine to it. Very excellent on a cool night with some homemade garlic bread.
