This has to be the BEST homemade minestrone I have ever eaten!! I used a can of diced tomatoes that were seasoned, but I am glad because it had flavor explosion!

The soup was good and it's easy to make. My family are meat eaters and couldn't stand no meat so I added some ground turkey. It made it that much better.

I love this soup and so does my family of 3. We half the recipe and still have plenty leftover for another round later. We add a small can of mushrooms as well.

Made this for game night at my church. Everyone raved about it. Added both beans and extra chicken broth. Served with garlic cheese bread. Will make it again that is for sure....

Can hardly wait for Superbowl Sunday to make this soup! Love the idea of adding kidney beans, missdreday! I plan to add navy beans myself! Thanks for the great tip, cougarMom, of replacing some of the tomato juice with chicken stock! Oh, as for ABBCAT, could there have been too much red 'whine' in the soup? I believe we have a winner minestrone soup here! I know mine will taste awesome, as well!

Couldn't wait for Superbowl Sunday! Made the minestrone soup last night and it tasted as awesome as I knew it would be! Added one small can each of kidney and navy beans, rainbow rotini and extra chicken broth to make up for the added ingredients. Everyone raved and had seconds!:)
