cups (7 1/2 ounces) uncooked medium pasta shells
2/3
cup Italian dressing
1/2
cup shredded Parmesan cheese

medium carrots, sliced (1 cup)
1
medium green bell pepper, chopped (1 cup)
1
can (19 oz) Progresso® red kidney beans, drained, rinsed
1
can (15 oz) Progresso® chick peas (garbanzo beans), drained, rinsed
1
can (14 1/2 ounces) Italian-style stewed or diced tomatoes, drained
  • 1 Cook and drain pasta as directed on package.
  • 2 Toss pasta and remaining ingredients. Serve warm or cold.

Expert Tips

Minestrone means "big soup" in Italian. This thick, hearty vegetable soup is at the other end of the soup spectrum from Italy's minestrina-- or "little soup"--that has a thin broth and smaller pieces of vegetables.

Use whole wheat pasta shells for heartier pasta with extra fiber and protein.

Want a little more crunch? Add a stalk of celery to the mix. Remove ribs and slice celery into thin pieces. It goes great with the carrots and bell pepper.

    I made this for dinner last night to go with the pork tenderloin. It was delicious. Because it made so much I gave my 2 friends some to take home. They loved it and want the recipe. This is going into my personal favorite of recipes.

    I think the amount of pasta is written wrong. Three cups uncooked shells is not the same as 7½ oz uncooked. I think it should be written “7½ oz uncooked pasta shells [3 Cups cooked]”. I just made this with 3 cups uncooked shells and ended up with a MOUNTAIN of pasta. This dish was good but there was way too much pasta; I’ll try again and only use 7½ oz uncooked.
