I love the yummy flavors of this refreshing salad. It's made with quinoa, a complete protein, so it's good for you too.

cup quinoa

cups water

can black beans, rinsed and drained

cup halved cherry tomatoes

cup chopped green onions
1/4
cup chopped fresh cilantro

ripe avocado, peeled, pitted, chopped

tablespoons olive oil

tablespoon lime juice
1/2
teaspoon grated lime peel

teaspoon ground cumin
1/2
teaspoon salt

garlic clove, chopped

teaspoon sugar
  1. Cook quinoa in water (salted, if desired) as directed on package. Cool.
  2. Stir in black beans, tomatoes, green onions, cilantro and avocado.
  3. Mix remaining ingredients in small bowl. Pour over quinoa mixture. Season to taste with additional salt and pepper if desired. Serve immediately or cover and refrigerate overnight;if refrigerating overnight, add tomatoes and avocado just before serving.
