Mexican Polenta Pie

Thanks to chili beans and jalapeño pepper cheese, cornmeal mush never tasted so good!

Ingredients

3/4
cup cornmeal
2
cups water
1/4
teaspoon salt
1
egg, slightly beaten
1
can (15 ounces) chili beans, drained
3/4
cup shredded Monterey Jack cheese with jalapeño peppers (3 ounces)
1/3
cup crushed corn or tortilla chips

Directions

  • 1 Heat oven to 375°F. Grease pie plate, 9x1 1/4 inches. Mix cornmeal, water and salt in 2-quart saucepan. Heat to boiling, stirring constantly; reduce heat to medium. Cook about 6 minutes, stirring frequently, until mixture is very thick; remove from heat. Quickly stir in egg. Let stand 5 minutes.
  • 2 Spread cornmeal mixture in pie plate. Bake uncovered 15 minutes. Spread beans over cornmeal mixture. Sprinkle with cheese and corn chips.
  • 3 Bake uncovered about 20 minutes or until center is set. Let stand 5 minutes before cutting.

Sorry, but on the last review, I accidentally said 2 cups of cornmeal. It was actually only ONE.

Just made the polenta pie again, except with these changes: 2 cups of the cornmeal, same amount of water, no egg, mixed in 3 slices of American cheese and 7 splashes of hot sauce. plus 1 cup microwaved frozen white corn. Baked for 20 min., then topped with onion rings and garlic, sea salt and Italian seasonings and baked for another 15 min. Wowee, reminded me of old fashioned corn pudding (a recipe I cannot seem to find). Really out of this world. Thanks for idea

Just made the polenta pie. What a treat! Used a can of black beans instead of chili beans and left off the chips on top. Did use the pepper jack cheese and also sprinkled some sea salt and dried garlic over top before baking. Will definitely make again... I think would be very good next time maybe with some caramelized onion rings on the top or on the side. We'll see.. Think there are lots of fun variations on this one. Thanks
