Ingredients

lb extra-lean (at least 93%) ground beef

jar (16 oz) Muir Glen® organic mild salsa
1
cup Muir Glen® organic tomato sauce (from 15-oz can)
1 1/2
cups water
2
cups uncooked regular or multigrain elbow macaroni
1
cup Green Giant® frozen corn
1/2
cup shredded reduced-fat sharp Cheddar cheese (2 oz)

  • 1 In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
  • 2 Stir in salsa, tomato sauce and water. Heat to boiling. Stir in macaroni and corn. Reduce heat; cover and simmer 12 to 15 minutes, stirring occasionally, until macaroni is tender.
  • 3 Sprinkle with cheese. Cover; let stand 1 to 2 minutes or until cheese is melted.

This recipe is good as is. It was not too watery at all. It gives the impression that it will be watery and then after a 15 min simmer it is completely soaked up. I felt the amount of seasoning was fine using medium salsa. Perhaps some taco seasoning would have enhanced this, but I thought it was very flavorful as is.

Made this tonight with a few changes using what I had in the kitchen. I used 90/10 lean beef and added diced onions and peppers when cooking the beef. I used black bean and corn salsa and vodka sauce that was in the fridge already. threw in whole wheat shells and a can of corn and let it cook for about 12minutes. absolutely delicious. I read another review while I was cooking that mentioned black beans so I threw a can of those in as well. It turned out being pretty much "everything but the kitchen sink" pasta. It was a hit and not unhealthy at all. will definitely make again

The only reason for 4 instead of 5 spoons is that mine came out a little too tomato saucy for our tastes, but will definitely be making this again. I too, added a couple teaspoons of taco seasoning mix and it gave it just the right amount of punch for us.
