Yum! Very easy to make vegetarian by subbing TVP for hamburger. Also added some spinach.

I made this for dinner last night and was absolutely wonderful. Thought I would have some good leftovers, nope, they finished it all. I did try it with the taco seasoning mix and also had sour cream. Was soooo delicious and very easy not much involved to prep this! Got to try this one!!

I made this for a brunch. I couldn't believe how many people were asking me for the recipe so I decided to share it on FB. Love love love this. I also used Pace Picante (that's what was in my pantry. I will DEFINITELY make this again. I loved it and it made me look good at a brunch so Thank You.

This is fantastic! I took the advice from some of the reviews and used 1lb of hamburger meat seasoned with taco seasoning and substituted Pace Picante Sauce (Thick & Chunky - Medium) instead of the El Paso Thick and Chunky Salsa. It added much more flavor. We also topped it off with sour cream and had chips and salsa for a side dish. I will definitely use this again.

This is a good, quick recipe. I used the mexican corn, which adds more flavor and served with sour cream. My family really enjoys this and it makes good left overs.

This was a great hit with my family, even with my 6 and 5 year olds. I did add taco seasoning to the meat and used a lb. instead of a half lb. I also will next time cut the rigatoni into smaller rings once cooked and before baking it just to make it more kid friendly, but we LOVED it and will make it again!! Sour cream on top was good too!!

Very easy and delicous...I added taco seasoning to the meat...I think that made it...my family enjoyed it and the kids brought the leftovers for there school lunches wrapped in a tortilla minus the noodles.

Great basic. You can personalized this to your tastes. I added cilantro and exchanged the black beans for a can of thick-style chili. The chili made the recipe more kid friendly. It was even better the next night. Enjoy!
