I made this tonight and my son and I both really like it, therefore, we will be making this again. I changed a few things: Turkey instead of Beef, Cheddar Cheese instead of Mexican, Gluten-Free Noodles. And, since I didn't have a 4 quart casserole I made it in 2-2 quart with one going in the oven and another in the fridge for later.

This was a HUGE hit! I made it for a Pinterest-themed office potluck and my coworkers really enjoyed it. I took it home and my husband loved it so much he had me make it again for the weekend. We made a few alterations to the recipe: Each time I used a whole pound of beef, not just half a pound. This made it more robust and hearty. I used garden rotini pasta instead of what it called for because well, it's what I had. Rotini is good for casseroles and will will continue using that for this dish. The first time I forgot the cilantro and then the second time I used it. It makes the dish taste completely different, but both very good. My husband says that without the cilantro, it's like a really good casserole from a potluck or a TV dinner casserole. With the cilantro, it tastes more "organic," which to him means it reminds him of casseroles made from his grandmother's garden. This is a FANTASTIC recipe!

I made this for dinner last night and was absolutely wonderful. Thought I would have some good leftovers, nope, they finished it all. I did try it with the taco seasoning mix and also had sour cream. Was soooo delicious and very easy not much involved to prep this! Got to try this one!!

I made this for a brunch. I couldn't believe how many people were asking me for the recipe so I decided to share it on FB. Love love love this. I also used Pace Picante (that's what was in my pantry. I will DEFINITELY make this again. I loved it and it made me look good at a brunch so Thank You.

This is fantastic! I took the advice from some of the reviews and used 1lb of hamburger meat seasoned with taco seasoning and substituted Pace Picante Sauce (Thick & Chunky - Medium) instead of the El Paso Thick and Chunky Salsa. It added much more flavor. We also topped it off with sour cream and had chips and salsa for a side dish. I will definitely use this again.

This is a good, quick recipe. I used the mexican corn, which adds more flavor and served with sour cream. My family really enjoys this and it makes good left overs.

This was a great hit with my family, even with my 6 and 5 year olds. I did add taco seasoning to the meat and used a lb. instead of a half lb. I also will next time cut the rigatoni into smaller rings once cooked and before baking it just to make it more kid friendly, but we LOVED it and will make it again!! Sour cream on top was good too!!
