Steps

  • 1
Heat oven to 375°F. In large bowl, stir cookie mix and cocoa until well blended. Stir in butter and egg until dough forms. On floured surface, roll dough 1/4 inch thick. Cut with 3/4- to 1-inch letter-shaped cookie cutter. Place 1 inch apart on ungreased cookie sheets.
  • 2
Bake 5 to 7 minutes or until set. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.
  • 3
Reduce oven temperature to 350°F. Generously grease bottom and sides of two 8x4-inch loaf pans with shortening. Line bottoms of pans with cooking parchment paper; grease paper with shortening.
  • 4
Make cake batter as directed on package. Spread 1/2 cup batter in bottom of each pan. Place desired cookie letters lengthwise, standing up in middle of each pan, until you can't fit any more cookies in a row. Carefully pour 1 cup remaining batter on top of cookie letters, taking care not to tip them over.* Mark pan to identify front.
  • 5
Bake at 350°F 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool cakes in pans 10 minutes. Run thin metal spatula or knife around edges of loaf pans. Turn onto cooling rack; remove parchment paper. Cool completely, about 1 hour. Freeze cakes 15 minutes.
  • 6
Place 1 cake layer on serving platter; mark platter to identify front of cake. Spread about 1/4 cup frosting over top of cake. Top with remaining cake layer. Spread about 1 cup frosting over cake to seal crumbs. Freeze 15 minutes longer.
  • 7
Spread remaining frosting over cake. Top with shaved chocolate. To serve, cut cake into slices at front end that has been marked on platter to reveal the message.

Tips from the Betty Crocker Kitchens

  • tip 1
*Leftover cake batter can be baked into a few cupcakes. Follow package directions to fill paper baking cups about two-thirds full, and bake. Frost with additional frosting, and top with shaved chocolate.
