Mediterranean Couscous and Beans

Raisins, tomatoes and garbanzos with an accent of feta cheese make this a tasty meal you can put on the table in a snap.

Ingredients

cups vegetable broth or Progresso™ chicken broth (from 32-oz carton)

cups uncooked couscous

cup raisins or currants
1/4
teaspoon pepper

teaspoon ground red pepper (cayenne)

small tomato, chopped (1/2 cup)

can (15 oz) Progresso™ chick peas (garbanzo beans), drained, rinsed

cup crumbled feta cheese

  • 1 Heat broth to boiling in 3-quart saucepan. Stir in remaining ingredients except cheese; remove from heat.
  • 2 Cover and let stand about 5 minutes or until liquid is absorbed; stir gently. Sprinkle each serving with cheese.

Expert Tips

Garbanzo beans, also known as chickpeas, have a round, irregular shape and nutlike flavor. These "little chicks" are very popular in Indian, Mediterranean, Middle Eastern, Italian and Mexican cuisines.

No need to crumble your own feta. Look for crumbled cheese at your grocery store.
