(1-lb) round loaf focaccia
medium tomatoes, sliced
(1-oz) slices mozzarella or provolone cheese
medium green bell pepper, sliced
thin slice red onion, separated into rings
cups chopped purchased rotisserie chicken
Cut focaccia in half horizontally. In small bowl, mix mayonnaise and pesto. Spread on cut surfaces of focaccia.
Layer bottom half of focaccia with tomatoes, cheese, bell pepper and onion. Place chicken on top of vegetables. Cover with top half of focaccia; press down lightly. Cut into wedges.
Look for flat, round Italian focaccia loaves in the bakery or deli department of most large grocery stores. Before this delicious bread is baked, the baker uses his thumb to dimple the dough, then seasons it.
Pick up potato salad at the deli to serve with wedges of this hearty sandwich.
