This meatloaf is loved by everyone I know who tasted it. It's a family favorite and sure to please even picky eaters. Serve with mashed potatoes and fresh green beans or other vegetables.

cup onion, minced

cup green bell pepper, minced

cup ketchup

ea. saltine crackers, crushed fine

Topping:

can tomato paste

cup ketchup
1/4
tsp garlic powder

tsp onion powder
  1. Preheat oven to 350-degrees F. In large mixing bowl, combine lean ground beef with egg, onion, bell pepper, ketchup, cracker crumbs, garlic powder, and black pepper. Mix well with hands until all egg, cracker crumbs, and ketchup are integrated into ground beef, and onion and bell pepper are well dispersed.
  2. Pat firmly into an ungreased 9x4" loaf pan. Using the forefinger, press along all edges to create a more rounded center of the meatloaf.
  3. In same mixing bowl, combined tomato paste, ketchup, garlic powder, and onion powder. Wisk until smooth. Spread evenly over entire meatloaf.
  4. Bake one hour at 350-degrees F. Carefully pour off any grease. Let meatloaf stand about five minutes, then remove from pan onto a serving platter.
