Meatless "Meatballs"

Crunchy nuts, cheese and potatoes combine to make a great-tasting meatless main dish.

Ingredients

cups Betty Crocker™ Potato Buds™ mashed potatoes (dry)

cup shredded Cheddar cheese (4 oz)

cup chopped pecans or cashews
1
cup chopped onion (1 large)

tablespoons soy sauce
1
teaspoon dried basil leaves

eggs, beaten

  • 1 Heat oven to 350°F. Grease or spray 15x10x1-inch pan.
  • 2 In large bowl, mix all ingredients. Shape mixture into 24 (1 1/2-inch) balls. Place in pan.
  • 3 Bake uncovered 20 to 25 minutes or until brown.

Expert Tips

Serve with mushroom gravy or spaghetti sauce.

Go ahead and try other types of cheese in this recipe. Mozzarella cheese works great if you are serving spaghetti and meatballs.
