Meatless "Meatballs"

Crunchy nuts, cheese and potatoes combine to make a great-tasting meatless main dish.

Ingredients

  • 1 1/2 cups Betty Crocker™ mashed potatoes
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1 cup chopped pecans or cashews
  • 1 cup chopped onion (1 large)
  • 2 tablespoons soy sauce
  • 1 teaspoon dried basil leaves
  • 4 eggs, beaten

Steps

    Heat oven to 350°F. Grease or spray 15x10x1-inch pan.

    In large bowl, mix all ingredients. Shape mixture into 24 (1 1/2-inch) balls. Place in pan.

    Bake uncovered 20 to 25 minutes or until brown.

    Go ahead and try other types of cheese in this recipe. Mozzarella cheese works great if you are serving spaghetti and meatballs.
