Meatless "Meatballs"

Ingredients

  • 1 1/2 cups Betty Crocker™ mashed potatoes
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1 cup chopped pecans or cashews
  • 1 cup chopped onion (1 large)
  • 2 tablespoons soy sauce
  • 1 teaspoon dried basil leaves
  • 4 eggs, beaten

Steps

    Heat oven to 350°F. Grease or spray 15x10x1-inch pan.
  • 2
    In large bowl, mix all ingredients. Shape mixture into 24 (1 1/2-inch) balls. Place in pan.

    Bake uncovered 20 to 25 minutes or until brown.

  • Serve with mushroom gravy or spaghetti sauce.
  • Go ahead and try other types of cheese in this recipe. Mozzarella cheese works great if you are serving spaghetti and meatballs.
