Meatball Banh Mi Baguettes

lb ground pork OR 1 lb ground chicken

pouch (9 oz) Progresso™ Recipe Starters™ creamy roasted garlic with chicken stock cooking sauce

cup Progresso™ panko crispy bread crumbs

teaspoons chile-garlic sauce or Asian hot sauce

package (2.25 oz) Asian salad kit (includes cabbage mixture, dressing, wonton strips and toasted almonds)

loaves (20-inch each) baguette French bread

  • 1 Heat oven to 450°F. Line large cookie sheet with foil; spray with cooking spray.
  • 2 In large bowl, mix ground pork, 1/2 cup of the cooking sauce, the bread crumbs, 2 teaspoons of the chile-garlic sauce and, if desired, salt and pepper (do not overmix). Using about 2 tablespoons each, make 18 meatballs. Place on cookie sheet. Bake 13 to 15 minutes or until thoroughly cooked and no longer pink in center.
  • 3 Meanwhile, toss Asian salad mixture with dressing, wonton strips and toasted almonds; set aside. In 1-cup microwavable measuring cup, microwave remaining cooking sauce and chile-garlic sauce 30 to 45 seconds or until hot.
  • 4 Place bread in oven during last 5 minutes of bake time for meatballs. Remove meatballs and bread from oven. Using oven mitts, cut bread into 6 (5-inch) baguettes. Slice each baguette in half crosswise; remove some of the soft bread from both the top and bottom halves. Place about 1/2 cup of the salad mixture on bottom half of each baguette. Top each with 3 meatballs, about 2 tablespoons warm sauce and baguette top. Garnish with cilantro. Serve immediately.
