@shyesmom you could always make a regular size batch but bake a mini loaf pan for dinner nd freeze the rest in similar sized batches so you can just bake the other loaves as you want them. Just remember that it won't need an hour to bake or it will become dry. Hope that helps.

My son likes meatloaf and he would love this recipe is there any way to make it in a smaller batch. Its just the two of us and I am not a big fan of meatloaf (my mothers idea of it was a oily, greasy, onion blob with some hamburger) but I make it and eat it because its one of the few things that my son will eat. He doesn't like the taste of if reheated and I only eat it the night its made (my son doesn't know that I am not a fan) so all the extras go in the trash or to my son's dog (they think I don't know).

I made this meatloaf last night. I was very pleased with it and my family LOVED it. It is very moist and tasted great. I mixed tomato puree and ketchup to make the sauce and didn't put it on the meatloaf until the final 20 minutes of cooking. I highly recommend this recipe.

I have used this basic recipe for many years. I have added anything my spicerack holds. Tomato Paste is better than catsup. Easy on the sage and oregano as they overpower the final product. My friends all tell me it is the best. No two are ever the same as the spice rack may be lacking or have extra of many items. Enjoy!
