This recipe is so easy, and so good, I have a tough time understanding why it never caught on. Anytime one wants to have a potato side dish that gives a Mexican flair, but none of the spicyness and all of the good Mexican flavors one should try this. With all of the added ingredients, the end result loses its pasty instant potato taste that so many people dislike. I use regular canned fried onions, not cheddar. Because one adds cheddar cheese to the dish, cheddar fried onions I find superfluous.
