Marvelous Chocolate Truffles

Ingredients

ounces semisweet baking chocolate or white baking bars (white chocolate), chopped
2
tablespoons butter or margarine
1/4
cup whipping (heavy) cream
1
tablespoon shortening
1
cup (6 ounces) semisweet or milk chocolate chips or white baking chips
Finely chopped nuts or candy decorations, if desired

  • 1 Cover cookie sheet with aluminum foil. Melt baking chocolate in heavy 2-quart saucepan over low heat, stirring constantly; remove from heat. Stir in butter until melted; stir in whipping cream. Refrigerate 10 to 15 minutes, stirring frequently, just until thick enough to hold a shape.
  • 2 Drop mixture by teaspoonfuls onto cookie sheet. Shape into balls. (If mixture is too sticky, refrigerate until firm enough to shape.) Freeze 30 minutes.
  • 3 Heat shortening and chocolate chips over low heat, stirring constantly, until chocolate is melted and mixture is smooth; remove from heat. Dip truffles, one at a time, into chocolate. Place on aluminum foil-covered cookie sheet. Immediately sprinkle some of the truffles with finely chopped nuts or decorating candies.
  • 4 Refrigerate truffles about 10 minutes or until coating is set. Drizzle some of the truffles with mixture of 1/4 cup powdered sugar and 1/2 teaspoon milk. Refrigerate just until set. Serve at room temperature. Store in airtight container.

This was an amazing recipe. I have baked cookies, brownies, cake, and more, but this is my first time making candy, and more specifically, my first time making truffles. The result is just as it is said to be-- MARVELOUS! I am sure I didn't use specific measurements, but they were extremely close, which is very important. I didn't have baking chocolate at hand, so I used chocolate chips instead (3 tablespoons per ounce of baking chocolate). I also refrigerated the mix for 45 minutes instead of 15 minutes and stirred every 15 minutes. I used a mini ice cream scoop and shaped each ball after I made the fifteen different scoops. I followed the rest of the recipe according to the directions and added chocolate sprinkles and used the icing recipe as well. I think that this recipe is specific to just one batch, so multiple batches may cause a need for tweaks in the recipe, such as refrigeration time and cooling time. I don't know why others had problems, but experience could help. This is my first time making truffles, and they turned out near-perfect! I also made a video displaying this recipe if anyone wants to see it in action. It is titled 'How To Make Marvellous Chocolate Truffles'. (Yes, 'marvelous' is spelled wrong.) I love this recipe and recommended it to all of my baker friends. When I shared my truffles with my peers, they absolutely adored it and couldn't stop asking for more. I will definitely try this again.

This is a good recipe but the timing is all wrong! After melting the chocolate and putting it in the fridge it takes longer than 15 minutes for it to set up to make balls. 2 hours to be exact and even then it was still a little soft. I think 3 hours would be sufficient. I did learn a trick though. After scooping them on the cookie sheets and they are still too soft to form into balls. Stick them in the freezer for 5 minutes and then shape. Worked perfectly. I made a double batch of these. Everything worked fine except the timing part of it. Also, after dipping them in chocolate you really should sprinkle the toppings right then. Once they set its difficult to get toppings on. The finished product is good though. Delicious. Other reviewers didn't have much luck for some reason. They must have messed up somewhere. I didn't taste any shortening either. Using good chocolate and using exact measurements in the correct measuring tools is a must! Salt free butter too. I used Ghirardelli milk chocolate chips inside and Nestle Semi-Sweet on the outside. Crisco shortening. Heavy cream is a must too. Good recipe but needed to be tweaked a little.

Bad, like realy bad. Sorry dude but the shortining and chocolate turned into some sorta living goo. It was bad. Sorry but i will never make these again. Blech.
