Ingredients

2: packages (8 oz each) feta cheese, cut into 1/2-inch cubes

1: jar (8.5 oz) julienne-cut sun-dried tomatoes in oil and herbs, undrained

3/4: cup olive oil

1/4: cup white wine vinegar

1/4: cup capers, drained

1: teaspoon crushed red pepper flakes

4: sprigs (4 inches) fresh thyme

4: strips (3 inches) lemon peel

Directions

1 In medium bowl, mix cheese, tomatoes, oil, vinegar, capers and pepper flakes until blended. Divide mixture evenly among 4 (half-pint) jars with tight-fitting lids. Add 1 sprig thyme and 1 strip lemon peel to each jar.
2 Cover; refrigerate at least 24 hours before serving. Serve at room temperature. Store in refrigerator.
