packages (8 oz each) feta cheese, cut into 1/2-inch cubes

jar (8.5 oz) julienne-cut sun-dried tomatoes in oil and herbs, undrained

cup olive oil

cup white wine vinegar
1/4
cup capers, drained

teaspoon crushed red pepper flakes

sprigs (4 inches) fresh thyme

strips (3 inches) lemon peel
  1. In medium bowl, mix cheese, tomatoes, oil, vinegar, capers and pepper flakes until blended. Divide mixture evenly among 4 (half-pint) jars with tight-fitting lids. Add 1 sprig thyme and 1 strip lemon peel to each jar.
  2. Cover; refrigerate at least 24 hours before serving. Serve at room temperature. Store in refrigerator.
