Ingredients

Base

cups Gold Medal® all-purpose flour
1/2
cup powdered sugar
1
cup butter, softened

Filling

eggs
1 1/2
cups granulated sugar
1/4
cup Gold Medal® all-purpose flour
1/2
teaspoon baking powder
1/3
cup frozen margarita mix concentrate, thawed
2
teaspoons grated lime peel
1
tablespoon powdered sugar

  • 1 Heat oven to 350°F. In large bowl, mix base ingredients with electric mixer on low speed until crumbly. With floured fingers, press mixture firmly in bottom of ungreased 13x9-inch pan. Bake 20 to 25 minutes or until light golden brown.
  • 2 Meanwhile, beat eggs slightly in large bowl. Mix in granulated sugar, 1/4 cup flour and the baking powder until well blended. Stir in margarita mix and lime peel.
  • 3 Remove pan from oven. Pour filling over warm base. Bake 18 to 22 minutes longer or until top is golden brown and filling is set. Cool completely, about 1 hour.
  • 4 Just before serving, sprinkle bars with 1 tablespoon powdered sugar. Cut into 6 rows by 6 rows.

Use a fine-mesh strainer to evenly sprinkle the powdered sugar over the bars. Be sure to sprinkle on just before serving; powdered sugar is readily absorbed into the surface of the bars.

YUMMY, like mini lemon pies! I cooked the crust the night before which made for a very firm crust (which I liked), then made the filling the next morning. The top does brown, I went about 23 min. cooking and then cooled it in the fridge an hour, applied the powdered sugar and served. They looked and tasted great. Those who liked lemon/lime deserts couldn't get enough of them...I'll be making them again for sure!

Took these to a church function. Yummm! In response to the earlier rating, yes they browned on top, but the powdered sugar covered that up. Changes made: Used a sugar cookie mix blended with a stick of butter for the crust. Used limeade concentrate instead of the Margarita Mix. Deee-lightful!

These definitely did not turn out as expected, or even look at all like they do in the picture. I did everything as instructed in the recipe, but once they had been in the oven for 18 minutes, they started to turn dark brown. I was worried they were burning so I took them out, but the filling hadn't even set yet; it was still liquid. They just looked burned and unappetizing. Eventually I had to bake them for much longer than the recipe instructed just so they would solidify. They tasted all right when they were fresh (even though they looked terrible), but the next day the texture of the bars had completely changed and they didn't taste good anymore either. I had been planning on them for our Cinco de Mayo party but I didn't even bring them because they looked so awful, and I ended up throwing most of them away. What a waste.
