Ingredients

Crust

1 1/2
cups coarsely crushed pretzels
1/2
cup sugar
1/2
cup butter or margarine, melted

Cake

1
box Betty Crocker® SuperMoist® white cake mix
3/4
cup bottled nonalcoholic margarita mix
1/2
cup water
1/3
cup vegetable oil
1
tablespoon grated lime peel
3
egg whites

Topping

1
container (8 oz) frozen whipped topping, thawed
Additional grated lime peel, if desired

  • 1 Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only and lightly flour 13x9-inch pan, or spray bottom with baking spray with flour. In medium bowl, mix crust ingredients. Sprinkle evenly on bottom of pan; press gently.
  • 2 In large bowl, beat cake ingredients with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour batter over crust.
  • 3 Bake 34 to 39 minutes or until light golden brown and top springs back when touched lightly in center. Cool completely, about 2 hours. Frost with whipped topping; sprinkle with additional lime peel. Store loosely covered in refrigerator.

You’ll need about 3 1/2 cups small pretzel twists to get the 1 1/2 cups crushed pretzels.

Cut fat and calories in this cake by using fat-free whipped topping instead of regular whipped topping to frost the cake.

Look for the bottled pale green nonalcoholic margarita mix in the soft drink section of the supermarket. It is usually on the shelf with club soda, tonic water and other mixers.

My store was out of margarita mix, so I bought cream of coconut. MMM MMM Delish..everyone's raving about it. Cake was a great finish to a wondderful Cinco de Mayo! Thank u Betty C.

I made the cake, but used 1/4 cup tequila with the mixer. I didn`t use the pretzel crust, but made it a layer cake with lime curd filling. Then I made Butter cream frosting with a splash of tripel sec, orange zest and lime zest.

I made this cake and I added lime aid frozen concentrate instead of the marg mix. It made it taste more like lime and I did not have to put the lime peel. I then lined a 60oz margarita glass with greenish yellow fondant to look like the mix. I then placed layers of marg cake and my frosting in tne glass and topped it off with key lime squares and powdered sugar. Then i placed jello gelatin and lemonlime powerade together boiled them and molded it in pan so it was the thickest of real ice cubes and let it cool and cut ice squates nad placed it on top pf the keylime square. I added a large fondant lime for the glass edge and added an oversize curly straw or one from Dunkin works good too. I did rim my glass with melted matshmellow apprx 4 secs in microwave so you can hold the marshmellow and rim the glass. Then dip it in sugar it looks just like a marg on the ice with salt! My fav!
