Marbled Cheesecake Brownies (Carb Monitor™)

The Betty Crocker Kitchens shares a recipe using Carb Monitor™ chocolate chunk brownie mix. When counting carbs, remember to count calories, too.

Ingredients

box Betty Crocker™ Carb Monitor™ chocolate chunk brownie mix

tablespoon water
1/2
cup vegetable oil

eggs

package (8 ounces) cream cheese, softened
1/3
cup sucralose no-calorie granular sweetener
1/2
teaspoon vanilla
1
egg
1
jar (about 12.7 ounces) sugar-free fruit preserves (any flavor)

Directions

  • 1 Heat oven to 350°F for shiny metal or glass pan or 325°F for dark or nonstick pan. Grease bottom of 9-inch square pan.
  • 2 In medium bowl, stir brownie mix, water, oil and 2 eggs until well blended. Spread in pan. In medium bowl, beat cream cheese with electric mixer on low speed until creamy; beat in sucralose, vanilla and 1 egg until well blended. Drop by tablespoonfuls over brownie batter in pan. Cut through batter with knife several times for marbled design.
  • 3 Bake 35 to 40 minutes or until cream cheese mixture is light brown. Immediately spread preserves on top. Cool completely, about 1 hour. For brownies, cut into 4 rows by 4 rows. Store covered in refrigerator.

To quickly soften cream cheese, unwrap the cream cheese, place in a small microwavable bowl and microwave uncovered on High about 10 seconds or just until softened.
