Maple-Nut Streusel Coffee Cake

Ingredients

Streusel

cup packed brown sugar
1/4
cup Gold Medal® all-purpose flour
1/4
cup chopped pecans

tablespoons butter or margarine, melted

Coffee Cake

1 1/2
cups Gold Medal® all-purpose flour
3/4
cup packed brown sugar
1/2
cup chopped pecans
1/2
cup vegetable oil
1/4
cup milk
1
teaspoon baking powder
1
teaspoon maple extract
1/2
teaspoon baking soda
1/2
teaspoon salt
2
eggs, beaten
1
container (8 oz) sour cream

Directions

  • 1 Heat oven to 350°F. Spray bottom only of 8-inch square pan with cooking spray. In small bowl, mix all streusel ingredients with fork until crumbly; set aside.
  • 2 In large bowl, mix all coffee cake ingredients with spoon just until flour is moistened. Spread half of the batter in pan. Sprinkle with half of the streusel. Drop remaining batter by spoonfuls over streusel; carefully spread over streusel. Sprinkle with remaining streusel.
  • 3 Bake 35 to 45 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Serve warm.

I wasn't so impressed with this cake. I wanted to love it because I love maple but the flavor wasn't very pronounced. Also the streusel sank to the bottom of the cake, forming a (delicious) sticky layer with a rather dry cake on top. So I'm further looking for a good maple cake.

I was looking for a coffee cake recipe and i found this, i really like maple and pecans so i tried it; but i added a few things and changed it a little bit, i added 1/4 tsp of cinnamon to the streusel and used 1/2 tsp of maple extract and 1/2 tsp of vanilla instead of doing 1 tsp of maple so it's not overpowering.. and i didn't have any sour cream in hand so i used cream cheese instead it worked like a charm! the cake is so moist and fluffy! i made a vanilla maple glaze to put on top of the cake while it's still warm.. it's sooo delicious!!! my 18 month old boy loves it! it's not too sweet but enough to satisfy your sweet tooth! definitely going to make this again and again!
