Toysruskid, if you're worried about cholesterol, don't use as many eggs. Choline is important for brain and heart health, so I would use one whole egg and two or three whites per serving. That would cut fat and calories. I would also make a homemade low fat alfredo, using either fat free half and half or evaporated skim milk instead of cream and cutting the butter to 1/2 teaspoon, which is just enough to give the flavor. It's also a whole lot cheaper to make your own alfredo than to buy it. That will cut fat, cholesterol and calories. Also, remember that dietary cholesterol does not raise your blood cholesterol much, it's saturated fat that does that for you. This recipe sounds delicious, and, making some healthier swaps, I will definitely make this. I'll also use 100% whole wheat bread instead of the white to increase the fiber and vitamin content.

See what Dr. Oz says about eggs. He believes they are a wonderful source of protein and good for you. Being a cardiac surgeon he should know. He said don't use egg whites, enjoy the whole egg! This sounds great for a on occasion breakfast or brunch. Have not made it yet but will!

Absolutely delicious and so easy to make. Tasty, tasty. I added ham cubes and let it sit overnight; salt and pepper to taste. Everyone thoroughly enjoyed it. Love the idea of the mushrooms too. If you are eating egg dishes, you have cholesterol; cheese dishes add fat, ham adds salt. Enjoy everything in moderation, my friends, but do enjoy.
