Macadamia Nut Muffins

Ingredients

cups Original Bisquick™ mix
1/2
cup sugar
1/2
cup coarsely chopped macadamia nuts

cup half-and-half

tablespoons vegetable oil

teaspoons vanilla

egg, slightly beaten

  • 1 Heat oven to 400°F. Spray 12 regular-size muffin cups with cooking spray.
  • 2 In large bowl, stir together Bisquick mix and sugar; stir in nuts. Make well in center of mixture. In small bowl, mix half-and-half, oil, vanilla and egg; add to dry ingredients, stirring just until moistened. Divide batter evenly among muffin cups, filling two-thirds full.
  • 3 Bake 11 to 12 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan to cooling rack.

Expert Tips

To make Ham and Cheese Muffins, omit sugar, nuts and vanilla. Add 3/4 cup diced cooked ham and 3/4 cup shredded sharp Cheddar cheese.
