teaspoon Salt

teaspoon pepper

lb Shrimp (tails removed)

cup Sweetened, coconut flakes
2/3
cup Guava or Apricot Preserves

tablespoon Fresh Lime Juice
1
tablespoon Soy Sauce
1/8
teaspoon Hot Sauce
1/2
cup Roasted, Chopped Macadamia Nuts
1/4
cup Flour
1
large Slightly Beaten Egg

Directions

  • 1 Preheat oven to 425.
  • 2 Sprinkle shrimp with salt & pepper. Combine coconut & nuts; chop. Coat shrimp with flour; dip in egg then coconut mixture. Place on rack.
  • 3 Bake, turning once, till done. About 6 mins per side. Heat remaining ingrdients together till melted, serve alongside shrimp for dipping.
