Lumpy Pan Pizza

Ingredients

can (16.3 ounces) refrigerated flaky biscuits

can (8 ounces) pizza sauce
2
cups finely shredded mozzarella cheese (8 ounces)

slices (1 1/2 inches in diameter) pepperoni

  • 1 Heat oven to 375°F. Separate biscuit dough into 8 biscuits. Cut each biscuit into 8 pieces; place in medium bowl. Add pizza sauce and 1 cup of the cheese; toss to coat.
  • 2 Spread mixture in ungreased 9­inch square (2­quart) glass baking dish. Top with pepperoni and remaining 1 cup cheese.
  • 3 Bake 22 to 28 minutes or until golden brown and bubbly.

Definitely kid-friendly. I made this with a tube of refrigerated breadstick dough instead of the biscuits. I also substituted chopped string cheese for the mozzarella -- it worked just fine. I liked monkeylove's suggestion to bake the dough mixture first. I used a greased 8x11 glass dish and left it in the oven for about 30 mins. Then I piled on a bunch of other pizza toppings, added a few dollops of sauce on top, and baked for 10 mins more. The dough was soft, but not at all raw. A nice change of pace from regular flat crust pizza.

Wow, so good AND so easy. The first time I made this I followed directions. Was very good. The second time, I had no pizza sauce so I used Ragu w/meat flavor and also used colby cheese.Because I had a bunch of 14 year olds, I ended up making 3 pans,they loved it. This is on our "favorite "list.

My 10 year old daughter and my two toddlers love this. I cut the biscuits smaller, use hamburger meat and mini pepperoni (especially for my toddlers). My husband and I also like this recipe, very quick and easy.
