Lobster Bisque

Ingredients

  • 3 tablespoons butter or margarine
  • 1 small onion, finely chopped (1/4 cup)
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups milk
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 1 1/4 cups chopped fresh or frozen (thawed) lobster (about 12 oz)

    Melt butter in 3-quart saucepan over low heat. Cook onion in butter, stirring occasionally, until tender. Stir in flour, parsley, salt and pepper. Cook, stirring constantly, until mixture is bubbly; remove from heat.

    Stir in milk and broth. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in lobster. Heat to boiling; reduce heat. Simmer about 3 minutes, stirring frequently, until lobster is white.

  • If your family has a favorite fish other than the lobster, use it instead. Halibut, orange roughy or haddock make a good substitute. Make this bisque extra special by decorating the top with green onion wisps and a carrot slice cut into a decorative shape.
