cup Bisquick Heart Smart® mix

tablespoon water

egg white or 2 tablespoons fat-free egg product
1/2
cup cut-up cooked chicken breast
1/4
cup barbecue sauce
1/4
cup shredded reduced-fat Cheddar cheese (1 oz)

Directions

  • 1 Heat oven to 400°F. Spray 8x4-inch loaf pan with cooking spray. In small bowl, stir together Bisquick® mix, water and egg white; spread in bottom of pan.
  • 2 In small microwavable bowl, mix chicken and barbecue sauce. Microwave on High 1 minute; stir. Spoon over batter in pan to within 1/2 inch of edges; sprinkle with cheese.
  • 3 Bake 20 to 23 minutes or until golden brown; loosen from side of pan.

Well first of all this is a horribly written recipe not specific on how small the "cut up" chicken should be, is it supposed to be bit sized or just cut up? Second the "batter" was more like dough in my opinion very hard to "spread" in pan. I think the measurements need to be better described. I will see how good it taste when its done.

Maybe it was the bbq sauce I used - it's my fav on pork but maybe not so much on chicken. Neither husband nor myself cared much this and I don't see making it again.

This is a great, easy recipe. I added drained and rinsed black beans, corn, sliced olives and diced red onions - made a great difference. I used chicken I had cooked in the slow cooker with just barbeque sauce. Will make again!
