Couldn't find coconut cream so I used heavy whipping cream and added coconut extract. It was wonderful, still want to try it with the coconut cream but until I find it I've got it covered :)

THESE WERE TO DIE FOR!!! They were not as hard as they seem to make, and they were delicious! I had a lot of suggestions from people who do not like coconut, to put strawberries or other types of fruit on them. I liked them the way they were, but may try the strawberries next time.

I made this and followed the recipe exactly (except added a packet of TrueLime powder to the cream cheese filling) and it was delicious! I would definitely recommend this and will probably make it again. Made it for a cookout and got lots of compliments on it. And, I didn't think the frosting made it too sweet (and I am very picky when it comes to sweet things!)

Making these again, by request, for a party at my son's house. They disappear as soon as they're put on the dessert table. People can't believe they are made with a cookie mix and canned frosting. They really are a sweet treat.

I have these cooking in the oven as I write this. I thougt when I read the recipe the frosting sounded a bit heavy, so I added a small carton of Cool Whip to it. It makes the frosting very light, and oh so good. Can't wait to try these, I love cream cheese, am not crazy about coconut, but I think toasting it will be fine. There were .50c off coupons for the cookie mix, so I didn't think this was that expensive, most of the ingredients for desserts are a little costly, depends on what you are willing to spend for a great dessert! I personally think this was very creative.

These were VERY sweet and I have a HUGE sweet tooth, but the silver lining is I only ate one bar instead of one pan. And not much lime flavor. So the second time, I added lime juice to the frosting and didn't use the whole container of frosting on the cheesecake - just a thin layer on top. Not as sweet (Still pretty sweet though) and more lime flavor. and dont bake the crust all the way at first, maybe half the time, b/c after an hour in the oven for the cheesecake, the crust turns very dark and hard.

I really thought I would love this combination but it was missing something. It was way too sweet and heavy as well. Maybe a Cool Whip topping would have made it lighter. The cookie crust got very hard and it wasn't easy to get out of the pan.
