I noticed several people complained about this not starting with a roux.It is for a light version so of course a base of flour and butter would not belong here.You can tell by the ingredients what it will taste like and guess the texture.I must be in the minority.If I dont like ingredients or preparation method I simply close the window and no comment is necessary.

This recipe as written is too liquid; add 1 Tbls Gold Medal Wondra flour while melting the neufchatel to make a rue and then the other ingredients and it is much better. We skip the croutons. We have a large family of eight (including boys/teens) so we multiply the recipe by four & I add 1/2 cup shredded sharp cheddar and a drained 12 oz can of water packed tuna or salmon for a complete meal. Other substitutions include cooked white chicken and broccoli instead of the peas. They all LOVE it and it still only takes 10 minutes! Another add-in

when I first looked at this recipe, I thought you can't make mac & cheese without making a rue first. Well guess what girls, I WAS RIGHT! This whole thing was a dissater and wound up in the trash. I did keep out 2 small dishes of it and gave it to the dogs, a;though I wasn't mad at them. Run the other way, you do not want to try this one. Trust Granny! My pan ans whisk are boiling on the stove as I type this. Hope I don't have to throw them away too.Only is getting one spoon because I have to give it something to post this.

This dish was too runny. I added more cheese to thicken it up but it was still runnier than I would like. The boys ate it but didn't ask for seconds...

quick!!! best describes this mac&cheese. i ommitted the peas, but added some cheddar, garlic, black pepper and parsley flakes...kicked it up a notch! quite tasty! add-ins seem easy to this recipe; brocolli, onions, carrots, etc...

If you use a wire whisk on a non-stick pan you will take the finish off of it.

I liked this, I added 1 cup of frozen peas and carrots to it instead of just the peas, and I used whole grain pasta. ( hubby didn't like the whole grain pasta part) But this is a very easy, cheap version of a favorite, that I will definitely make again. It will be great for when I am in a hurry and I'm not in the mood to make a more traditional version of macaroni and cheese.

If you are over 10 years old, there is absolutely no reason to eat American Cheese or to use it for any type of a cheese substitute. Its better to eat a smaller portion of something that tastes amazing than to waste a meal eating children's food in order to save calories. This recipe wouldn't be bad if it used cheese with flavor - preferably a sharp cheddar, however a pepper jack would be great as well. The sauce needs to have almost more flavor than you would regularly prefer because the noodles are bland and the two will compliment each other.
