Ingredients

cup dried lentils (6 ounces), sorted and rinsed
1/2
cup uncooked brown rice
2 1/2
cups vegetable or chicken broth

package (16 ounces) frozen cut green beans or broccoli cuts
1
cup shredded Cheddar cheese (4 ounces)

  • 1 Heat oven to 375º. Mix lentils, rice and broth in 2-quart casserole. Cover and bake 1 hour.
  • 2 Stir in frozen green beans. Cover and bake about 30 minutes or until liquid is absorbed and rice is tender. Sprinkle with cheese.

This recipe was pretty good. I used chopped broccoli instead of green beans. My lid didn't seem to fit very well on the casserole dish I used; so I ended up adding some more vegetable broth when I added the broccoli. It did turn out good in the end. Definitely a nice, hearty meal for a cold rainy day!

This makes a delicious kid-friendly meal with very little prep. I made it exactly as the recipe indicated and it was wonderful - wholesome, a little "nutty" and filling. Add crusty bread and a salad for an easy week night dinner.

The recipe didn’t have any seasons listed, only veggie broth. I love lentils and I love to cook, I have like tons of seasonings in my cabinet. I added onions, green peppers, jalapeno pepper, cumin, turmeric, cinnamon, minced garlic, coriander. I sautéed my carrots & zucchini in turmeric, curry and cinnamon till they were tender. I had already baked the brown rice & lentils in the veggie broth onions and seasonings in the oven for an hour. Then added the zucchini, carrots and diced tomatoes. It's delicious and has a little color!
