cup dried lentils (6 ounces), sorted and rinsed
cup uncooked brown rice
cups vegetable or chicken broth
package (16 ounces) frozen cut green beans or broccoli cuts
cup shredded Cheddar cheese (4 ounces)
Heat oven to 375º. Mix lentils, rice and broth in 2-quart casserole. Cover and bake 1 hour.
Stir in frozen green beans. Cover and bake about 30 minutes or until liquid is absorbed and rice is tender. Sprinkle with cheese.
The green beans are added frozen halfway through the cooking time to help maintain their bright green color and texture. This casserole is so easy, it's sure to become one of your dinner favorites.
