Lemon Waffle Sandwiches with Lemon Curd and Fresh Berries

cups Original Bisquick™ mix
1 1/3
cups milk
teaspoon grated lemon peel
tablespoons fresh lemon juice
tablespoons vegetable oil
tablespoons granulated sugar
cup lemon curd
cup fresh raspberries
cup fresh blackberries
Powdered sugar

  • 1 Heat waffle maker; grease with vegetable oil or shortening. In large bowl, stir together Bisquick mix, egg, milk, lemon peel, lemon juice, 2 tablespoons oil and the granulated sugar until smooth.
  • 2 Pour batter onto center of hot waffle maker. (Check manufacturer’s directions for recommended amount of batter.) Close lid of waffle maker. Bake about 5 minutes or until steaming stops. Carefully remove waffle; cover to keep warm. Repeat with remaining batter.
  • 3 To serve, place each waffle on a plate; spread with 1 tablespoon lemon curd. Sprinkle berries evenly on half of each waffle; fold other half of waffle over berries. Sprinkle with powdered sugar.

Expert Tips

If Meyer lemons are available at your store, use them in this recipe for the grated peel and juice.

You can substitute frozen berries for the fresh raspberries and blackberries; thaw and drain before using.

Your yield may vary, depending on the size of your waffle maker. If it’s square or rectangular in shape rather than round, you can stack 2 small waffle squares together to make these sandwiches.
