I made these cookies for an English Tea and they were wonderful. The cookie part was soft and fragile so I am not sure they would ship well. Anyone who loves lemon will love the tangy center. I topped them off with a few strands of coconut and they were just yummy!! Worth making a family tradition!!!

This is a tasty tea cookie. I baked them exactly 10 minutes and they came out perfect. Here's a tip: after the lemon filling cooled, I put in in a pastry bag and used a big tip to fill each cookie. This made filling the cookies fast, efficient, and less messy than using a spoon. Also, I refrigerated a few cookies to see how they would taste, and the chilled filling was yummo!!

These cookies are easy and delicious. I had to bake them for 25 minutes., instead of 8-10 minutes. My oven does bake at the correct temperature, so there seems to be a discrepancy on the baking time. Since my husband & I are real fans of lemon, I added two tablespoons of lemon juice to the batter and WOW!! AWESOME!! No problem with the filling either, it is a fine finish to the cookie. I have given this cookie to five (5)people to taste test and they all fell in love with the cookie. I gave it 5 Spoons, even though the baking time for me was fifteen (15) minutes longer. If you are on time constraints, the baking time is misleading. Just to mention, if you don't want to add the filling, the cookie itself is very good! Be sure to add the lemon juice to the batter, for wonderful lemon flavor.

This recipe was okay. When I cooked the cookies for ten minutes, they weren't finished, they had to cook for ten minutes over. Also, the filling wasn't thick, it was too watery for me. It just wasn't that great. I was expecting better. I'd pick something else to make if I was you. It isn't worth it.
