Lemon-Garlic Broccoli with Yellow Peppers

Ingredients

cups fresh broccoli florets (about 10 oz)

cup bite-size strips yellow bell pepper

tablespoon olive oil

clove garlic, finely chopped

tablespoon water
1
teaspoon grated lemon peel

teaspoon salt
  • 1 In 3-quart saucepan, heat 4 cups water to boiling. Add broccoli; heat to boiling. Boil uncovered 2 minutes.
  • 2 Add bell pepper; boil 1 to 2 minutes or until vegetables are crisp-tender. Drain; remove from saucepan.
  • 3 To same saucepan, add oil and garlic. Cook over medium heat, stirring occasionally, until golden. Stir in 1 tablespoon water, the lemon peel and salt. Return broccoli mixture to saucepan; toss to coat.
