Lemon Curd

This is a tart, refreshing custard. It makes a tasty spread for scones, crumpets or English muffins.

Ingredients

cup sugar
1
tablespoon finely shredded lemon peel
1
cup lemon juice (5 large lemons)
3
tablespoons firm butter or margarine, cut up
3
large eggs, slightly beaten

  • 1 In heavy 1 1/2-quart saucepan, mix sugar, lemon peel and lemon juice with wire whisk.
  • 2 Stir in butter and eggs. Cook over medium heat about 8 minutes, stirring constantly, until mixture thickens and coats back of spoon (do not boil). Immediately pour into one 1-pint container or two 1-cup containers.
  • 3 Store covered in refrigerator up to 2 months.

I just made this and it was so EASY and it is fabulous!! I just picked the fresh Meyer lemons off my tree and made it for a Christmas party I'm going to tonight!! I'm going to give a jar to the hostess along with some other goodies I'm making!! I can't wait to have some on an english muffin later tonight with my cup of chai tea.... ahhhh life is good :)

My friend's mom made some of this, and I fell in love with it, and went on a search for my own recipe. I found this recipe in my Betty Crocker cookbook, and made it for myself. It is easy, and so delicious. Next I am going to try it with grapefruit instead of lemon.
