I made these for a babyshower and died the batter pink. Skipped the lemon but still added the marshmallow mix inside. Wasn't too difficult to do. I liked the idea of a suprise inside. It was a nice twist for an adult babyshower.

These cupcakes are so soft and sweet! Just a little lemon flavor not to overwhelming. THey are going to be great for this summer! My son loved them with just plain creme in the middle and I think that's what we will do for his birthday!

I just made these yesterday for a church potluck today and they are really yummy but I am not a real big fan of lemon so maybe next time I will use a yellow cake mix rather than a lemon one, it was a little to lemony for my taste. I may try chocolate filling next time, I think the possiblities are endless for this recipe. My dog must have thought they smelled DELICIOUS because he got on the table and snatched 4 of them and he has never in the 5 years we have had him gotten on the table and eaten anything.
